Four signature recipes

Salmon & Chervil Mousse

Serves 1 • 12 minutes
  • 60g fresh salmon fillet
  • 1 tsp fresh chervil, finely chopped
  • 1 tbsp heavy cream
  • Pinch of sea salt

Steam salmon gently until just opaque. Flake and fold through cream and chervil. Chill 8 minutes before serving.

Chicken Liver Pâté

Serves 1 • 18 minutes
  • 45g chicken liver
  • 1 tsp unsalted butter
  • ½ tsp fresh thyme
  • Small pinch cracked pepper

Sauté liver in butter until just cooked through. Mash with thyme and pepper. Rest at room temperature 6 minutes.

Tuna & Parsley Consommé

Serves 1 • 25 minutes
  • 50g line-caught tuna
  • 80ml fish stock
  • 1 tsp flat-leaf parsley
  • 3 drops lemon juice

Poach tuna in stock 4 minutes. Strain, reduce liquid slightly. Finish with parsley and lemon. Serve warm.

The Essentials

A brief guide to ingredients

Fish

Wild salmon or tuna, never farmed. The flesh should be firm and bright. Always remove skin and bones completely.

Herbs

Chervil, thyme and flat-leaf parsley only. Use the most tender leaves. Never dried. Chop at the last moment.

Dairy

Small amounts of heavy cream or unsalted butter may be introduced for texture. Observe the diner’s reaction closely.
